I never use the parking break IRL anyway, since the risk of the cables getting stuck due to rust and dirt is too high compared to just leaving a vehicle in gear. And automatic transmissions don't need the parking brake at all unless you're on some extreme hill in the himalayas. The Parking Brake is there for a reason.
Two things: 1) if do happens the same when you ran out of fuel then you are using Simple Automatic transmission type, change it to at least Real Automatic; 2) there is a not-so-recently added setting inside Options -> Gameplay, look for it and turn it off (automatic parking brake or something similar). #1.
To be short (and simple) if your truck and trailer are aligned, when you reverse, the trailer will go on the opposite way regarding your truck (e.g. if you turn your wheel to the left, your truck will go to the left, but your trailer to the right). Be gentle too, you can correct your trajectory most of the time without going back forward.
Besides the meat and potatoes of driving and the rather tricky reverse parking, Euro Truck Simulator 2 has so many features and settings, making this the ultimate truck management game. Sure there are a few shortcuts here and there, but it’s a game at the end of the day and needs to be fun. technically with double/TPD you can detach the rearmost trailer, then dolly, steer with remaining single in a dock and then do it to another or let some other truck do it. Once you pull in, it should say "press e to turn off engine" then once you do, it will say "press enter to sleep". Sleeping takes 8 hours and you wake up fully rested.

This evening's update to 1.47.0.32 has more problems than the 0.28 beta with EBS and ACC. Active cruise wants to stop the truck at the set distance whilst in a traffic queue. EBS generall behaves, but still seems to operate when set to 'disabled' - I'm not sure if that is actually the ACC kicking in, though, because the hazard lights do not .
